This Pan Fried Salmon has crisp skin and moist, tender flesh. It only takes salt and pepper to prepare this fresh salmon fillet.

The cooking time will vary with the fillets thickness.

Ingredients
  

  • 1 Tbsp butter (or olive oil)
  • 4 salmon fillets or salmon steaks
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Heat a large skillet with butter over medium-high heat.
  • Season the fish with salt and pepper.
  • Place the salmon (skin side down) in the pan. Cook for 3 minutes or until fish turns golden brown.
  • Carefully turn the salmon over with spatula and cook for an additional 3 minutes.
  • As soon as the fish is ready, transfer it to a flat plate and serve as desired.

This French open-faced pie with canned tuna, egg & cream filling seems completely simple, but it is so delicious. Don’t forget to add mustard to this Tuna Quiche, it will give a charm to it.

Ingredients
  

  • 1 sheet all butter puff pastry
  • 200 g tuna in water (drained)
  • 1-2 Tbsp mayonnaise
  • 2 tsp mustard
  • 2 eggs
  • 100 ml sour cream
  • salt and pepper to taste
  • 1 tomato
  • 30 g cheddar cheese shredded

Instructions
 

  • Preheat oven to 375 degrees F. Lay the puff pastry out on a baking sheet. Prick all over with a fork.
  • Pop in the oven for 10-12 minutes or until the crust starts to turn light gold. Remove the pastry from the oven, pressing the center down with a fork, if it puffed up a bit.
  • Meanwhile mix tuna and mayonnaise with fork. Season with salt and pepper.
  • Spread the mustard across centre. (I use mustard “a l’ancienne).
  • Spoon the tuna mix on top.
  • Combine eggs with sour cream and mix together. Season with salt and pepper.
  • Pour over tuna.
  • Slice tomato and arrange them on top of your quiche. Sprinkle with cheese.
  • Bake for 30 minutes or until quiche is golden brown.

Ingredients
  

  • 500 g salmon fillet with no skin or bones
  • 5 eggs
  • 250 г sour cream
  • 1/4 cup parsley chopped
  • 250 g smoked salmon cut into small pieces
  • Salt and freshly ground black pepper

Instructions
 

  • Preheat oven to 390° F (180°C). Grease a loaf pan using cooking oil.
  • Cut the fresh salmon into pieces and mix with a food processor.
  • Add the eggs and mix well.
  • Add the sour cream and parsley.
  • Add the smoked salmon, salt and pepper. Mix with a spatula.
  • Pour the batter into the loaf pan and bake in preheated oven for 35-40 minutes.
  • Allow the salmon terrine to cool before removing it from the pan. Serve the dish chilled.

Very nourishing and yet simple to make salad from canned tuna, rice, corn, avocado, eggs and tomatoes. No mayonnaise! This salad always comes to my mind when I have leftover rice.

Ingredients
  

  • 2 hard boiled eggs peeled
  • 1 can (150 g) tuna in its own juice drained
  • 100 g fully cooked rice
  • 1 avocado
  • 1 can whole kernel sweet corn drained
  • 2 medium tomatoes cut into 6-8 wedges
  • 1/4 red oinon peeled and cut in half-moon
  • Salt and freshly ground black pepper
  • 3 Tbs olive oil
  • Green onion or fresh dill minced

Instructions
 

  • In a nice big serving plate, mash tuna using a fork. Add rice and stir to combine.
  • Cut the avocado in half, using a sharp knife, slice through the avocado lengthwise until you feel the knife hit the pit. Remove the pit and dice avocado into cubes.
  • Add avocado, corn, tomatoes, and red onion. Carefully mix. Season with salt and pepper to taste and drizzle with olive oil.
  • Slice eggs into quarter. Arrange them on top of the salad. Garnish with green onion.

  • 160 g tuna in water drained
  • 5-6 slices smoked salmon
  • 160 g mascarpone cheese
  • 1/2 onion chopped
  • salt and pepper to taste
  • fresh dill to taste

Instructions
 

  • In a bowl, combine together mascarpone cheese and tuna, mash it with fork.
  • Add chopped dill and minced onion, salt and pepper.
  • Add finely chopped smoked salmon and stir together.
  • Transfer to a small dish and garnish with chopped fresh dill or with thin slices of salmon. Cover with food plastic wrap.
  • Chill in the fridge for at least 6 hours.

Salmon in Puff Pastry

Who says you need to make a special dough for amazing appetizers? Thank goodness for puff pastry! It is so easy to use and you can buy it in the freezer section at any grocery store. I want to introduce you to this delicious puff pastry packets that are filled with salmon, sour cream and herbs. And can be served with any green salad of your choice. It’s great for brunch, lunch, or light dinner. This will definitely be on my holiday table this year.

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion
  • 2 tbsp sour cream
  • 200 g fresh salmon skinless, boneless
  • Salt and freshly ground black pepper to taste
  • Some fresh dill finely chopped
  • 1 sheet all butter puff pastry
  • 1 egg

Instructions
 

  • Heat olive oil in a skillet over medium-high heat. Add finely chopped onion cook and stir until tender.
  • Cut salmon into small cubes. Season with salt and pepper, add sour cream, cooked onion and fresh dill. Gently mix.
  • Preheat oven to 380 degrees F. Line baking sheet with parchment paper.
  • Gently roll out the dough to a thickness of about 1/2 cm. Using 8 cm round cookie cutter carefully cut out circles.
  • Place pastry rounds on a flat surface, divide salmon mixture between them and spread one tea spoon over pastry, leaving a 1/2 cm border all around.
  • Brush pastry borders with water. Top with pastry rounds and press edges together firmly to seal.
  • Place the pastry packets on baking sheet and brush with egg yolk.
  • Make a small hole in the middle of the top of each lid. Use a paring knife to score the top of the pastry as desired. Be careful not puncture through.
  • Bake for about 20 minutes, or until golden.

  • 4 salmon fillets remove bone and skin
  • 1 large lemon thinly sliced
  • 8 spring fresh rosemary washed
  • 8 Tbsp olive oil
  • salt and pepper to taste
  • 1 tsp paprika

Instructions
 

  • Preheat oven to 350ºF.
  • Add 4 Tbsp of olive oil to baking dish. Place one slice of lemon and one rosemary spring under each salmon fillet.
  • Add salt, pepper and paprika evenly over salmon and place one slice of lemon and one rosemary spring on top of salmon.
  • Drizzle 4 Tbsp of olive oil over salmon.
  • Bake 25 minutes until salmon is flaky.
  • Place salmon on serving platter and enjoy.

Carrots and leeks are the perfect combination of flavors for baked salmon. This is an easy recipe to prepare salmon and veggies in an aluminum foil.

  • 4 salmon fillets
  • 4 tsp mustard
  • 1-2 leeks
  • 2 carrots
  • salt and pepper to taste
  • 4 Tbsp olive oil

Instructions
 

  • Preheat oven to 400 degrees F. Prepare 12×12 inch foil pieces for each fillet.
  • Place salmon on prepared foil and spread mustard over each fillet. (I use traditional mustard “a l’ancienne”, but you can use any type).
  • Wash the leeks and cut into thin slices.
  • Shred the carrots.
  • Top each salmon fillet with carrots and leeks, drizzle 4 Tbsp. of olive oil and season with salt and pepper.
  • Bring the long sides of the foil up the middle and fold the edges together.
  • Bake for about 30 minutes or until salmon is cooked though.
