Chocolate King Cake (Galette des Rois)

King Cake is a very popular French pie that celebrates the Epiphany, in early January. My children love this cake as well as chocolate so the Chocolate King Cake makes them twice as happy!

  1. Bring the heavy whipping cream to a boil. Pour it on the chocolate, wait a few seconds then mix well until the mixture is homogeneous.
  2. Beat the softened butter and sugar together.
  3. Beat in the egg. Mix.
  4. Then, add the almond flour and mix well.
  5. Add the melted chocolate to the almond preparation and mix well. If this preparation is too thin (because it is still hot), leave to cool in the refrigerator for 10-15 minutes.
  6. Roll out one sheet of puff pastry. Spread the chocolate-almond filling over the center of the dough, leaving a 1 inch (1.2 cm) exposed border. If you wish, place a little porcelain figurine "fève" in the filling.
  7. Brush the edges of the pastry with water and cover with another circle of dough on top and press down to seal the edges.
  8. If you want, with a knife or just with your fingers, decorate the edges.
  9. Brush with beaten yolk. Place in the refrigerator for at least 1 hour.
  10. Preheat oven to 390F (190C).
  11. Brush with yolk one more time. Using a knife, create a design on top of your galette. Poke 3-5 holes, to allow steam to escape while baking.
  12. Bake for 30 minutes or until the pastry is golden brown.

King Cake (Galette des Rois)

This is a very popular French pie that celebrates the holiday of Epiphany, the day when 3 wise men came bearing gifts for newborn Jesus. The traditional way to bake this king cake is to place a porcelain figurine or “fève” into the center of the galette.  The person who receives the slice with the figurine is “King of the Day” and gets to wear a (paper) crown for the rest of the day.

  1. Preheat oven to 380 degrees F. Thaw one sheet of puff pastry until room temperature. Roll the pastry dough into circle and transfer to a parchment lined baking sheet. Prick with a fork.

  2. Bake for 12-15 minutes.

  3. Peel the apples and cut them in half through the stem. Remove the stems and slice the apples cross wide in very thin slices. Add lemon juice.

  4. Arrange the apples slices in an overlapping spiral pattern.

  5. In a medium bowl beat the eggs with sugar. Add calvados, sour cream and almond powder, mix well.

  6. Pour the mixture over the apples.

  7. Bake for another 15 minutes.

  8. Sprinkle with sliced almonds and keep baking for 30 more minutes until golden.

  9. Remove from the oven and cool in the pan. Transfer to serving plate and sprinkle with powdered sugar.

Quiche With Mushrooms

French open-faced pie from puff pastry with buttery mushroom filling. To save time, I use canned sliced mushrooms. But you can use fresh ones as well.

  1. Peel and cut the onion. In a medium skillet, heat oil or butter until hot, add onion and sauté for about 3 minutes. Add sliced mushrooms and sauté for another 7-8 minutes. Season with salt and pepper. Remove from heat.
  2. Preheat oven to 375 degrees F. Lay the puff pastry on a parchment paper and transfer it onto a baking sheet. Prick all over with a fork.
  3. Evenly spoon the mushrooms mix on top.
  4. In a bowl, whisk together eggs and cream. Season with salt and pepper. Pour over the mushrooms.
  5. Place the cheese slices all over the pie. Sprinkle with nutmeg.
  6. Bake on the bottom rack for about 35 minutes, until golden.
  7. Garnish with herbs before serving.

  1. Preheat oven to 375 degrees F. Lay the puff pastry out on a baking sheet. Prick all over with a fork.

  2. Pop in the oven for 10-12 minutes or until the crust starts to turn light gold. Remove the pastry from the oven, pressing the center down with a fork, if it puffed up a bit.

  3. Meanwhile mix tuna and mayonnaise with fork. Season with salt and pepper.

  4. Spread the mustard across centre. (I use mustard "a l'ancienne).

  5. Spoon the tuna mix on top.

  6. Combine eggs with sour cream and mix together. Season with salt and pepper.

  7. Pour over tuna.

  8. Slice tomato and arrange them on top of your quiche. Sprinkle with cheese.

  9. Bake for 30 minutes or until quiche is golden brown.

The Quiche is a French open faced pie. Amazing dish which can be served with tossed salad, roasted potatoes, bouillon ( broth ) or just by itself.

  1. Preheat oven to 350 degrees F.
  2. On parchment paper, roll puff pastry out to larger than the size of your baking dish circle. Transfer to a pie plate. Using a fork, prick the surface of the dough to keep it from puffing up.
  3. Pop in the oven for 10-12 minutes or until the crust starts to turn light gold. Remove the pastry from the oven, pressing the center down with a fork, if it puffed up a bit.
  4. Cut ham into small cubes and spread on top of the dough.
  5. Sprinkle with shredded cheese.
  6. In a medium bowl, whisk together eggs, cream, salt and pepper. Pour evenly over the cheese layer.
  7. Bake for 30 minutes, or until the top is golden brown and a tooth pick comes clean.

Puff Pastry Apple Tart

Very simple puff pastry apple tart recipe with minimum ingredients and maximum flavor. You don’t even need a mold for it. Sour apples work the best. I use brown sugar, it gives the apples that caramelized taste. Can be served warm with a scoop of vanilla ice cream, or cold with some powdered sugar on top.

  1. Preheat oven to 380 degrees F. Cover a large baking sheet with parchment paper.
  2. Season shrimp with salt, pepper and seasoning.
  3. Roll out the pastry dough and cut into 1 cm wide strips.
  4. Starting at the top, wind one pastry strip around one shrimp, slightly overlapping the pastry and ending just before the tail. Repeat with each shrimp.
  5. Place shrimp onto the baking sheet. Beat the egg in a small bowl with a fork, to make egg wash. Brush the shrimp pastry with egg wash.
  6. Bake for about 12 min, or until golden brown. Do not overcook.

Salmon in Puff Pastry

Who says you need to make a special dough for amazing appetizers? Thank goodness for puff pastry! It is so easy to use and you can buy it in the freezer section at any grocery store. I want to introduce you to this delicious puff pastry packets that are filled with salmon, sour cream and herbs. And can be served with any green salad of your choice. It’s great for brunch, lunch, or light dinner. This will definitely be on my holiday table this year.

  1. Heat olive oil in a skillet over medium-high heat. Add finely chopped onion cook and stir until tender.
  2. Cut salmon into small cubes. Season with salt and pepper, add sour cream, cooked onion and fresh dill. Gently mix.
  3. Preheat oven to 380 degrees F. Line baking sheet with parchment paper.
  4. Gently roll out the dough to a thickness of about 1/2 cm. Using 8 cm round cookie cutter carefully cut out circles.
  5. Place pastry rounds on a flat surface, divide salmon mixture between them and spread one tea spoon over pastry, leaving a 1/2 cm border all around.
  6. Brush pastry borders with water. Top with pastry rounds and press edges together firmly to seal.
  7. Place the pastry packets on baking sheet and brush with egg yolk.
  8. Make a small hole in the middle of the top of each lid. Use a paring knife to score the top of the pastry as desired. Be careful not puncture through.
  9. Bake for about 20 minutes, or until golden.
