Quick Almond Cake

This is very unique recipe. All you have to do is whisk all the ingredients together in the mixer bowl for 1-2 minutes, bake for 30 minutes and voilà, you can enjoy the cake with your favorite cup of tea.

Quick Almond Cake

You can use any cake pan you like or have. My favorite one is loaf pan, and I usually make it without the almonds on top. Easy to cut and easy to pack for lunch or picnic.

Ingredients
  

  • 180 g sugar
  • 4 eggs
  • 100 g unsalted butter softened
  • 1 pinch of salt
  • 100 g almond flour
  • 60 g all purpose flour
  • 2 tsp baking powder
  • 1 Tbsp sliced almonds (optional)
  • 1 tsp confectioner’s sugar (optional)

Instructions
 

  • Preheat oven to 380 degrees F. Grease a cake pan.
  • In a medium bowl whisk all the ingredients together until combined.
  • Pour the mixture into the prepared cake pan. You can sprinkle with almonds if desire.
  • Bake in the oven for about 35 minutes or until a toothpick inserted in the middle of the cake comes out clean.
  • Remove your cake from the oven and allow it to cool. Transfer to a plater. Dust it with powdered sugar before serving.

  • 4 eggs
  • 220 g granulated sugar
  • 115 g melted butter
  • 150 g all purpose flour

Instructions
 

  • Preheat oven to 380ºF. Grease and flour a cake pan.
  • Beat eggs and sugar with mixer until slightly thickened.
  • Add melted butter and mix well.
  • Stir in the flour and baking powder.
  • Add the cranberries and stir gently.
  • Pour batter into the prepared pan. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the cake from the oven and allow it to cool. If desired, dust with confectioners sugar.

Gluten-free Almond Cake

Here is the incredibly delicate and gluten-free almond cake. This is the “Amandier” recipe by renowned French Pastry chef Christophe Michalak with minor modifications. The main ingredients are almond flour and mascarpone.

Ingredients
  

  • 6 eggs
  • 180 g sugar
  • 40 g honey
  • 300 g almond flour
  • 140 g softened salted or unsalted butter
  • 100 g mascarpone cheese
  • Some orange zest
  • 1 Tbsp liquid vanilla (or 1 packet of vanilla sugar) (optional)
  • 2 Tbsp sliced almonds
  • Some powdered sugar (optional)

Instructions
 

  • Preheat oven to 330°F (150°С). Grease baking pan with butter or line with parchment paper.
  • In a mixer bowl, put eggs, sugar, and honey.
  • Mix together.
  • Add almond flour and mix again.
  • In another bowl, mush the butter and mascarpone cheese together using a fork.
  • Add the mascarpone and butter to the egg-sugar mixture and mix again.
  • Add orange zest and vanilla to the batter. Mix well for the last time.
  • Pour the batter into baking pan.
  • Sprinkle with sliced almonds.
  • Bake in the preheated oven until golden, about 45 minutes. Allow the almond cake to cool before removing it from the pan. Sprinkle with powdered sugar before serving.

  • 150 g walnuts
  • 250 g softened butter
  • 200 g sugar
  • 4 eggs
  • 200 g all purpose flour
  • 1 tsp baking powder
  • 150 g raisins
  • Some powdered sugar

Instructions
 

  • Preheat the oven to 375 degrees F. Line the bottom of the pan with parchment paper.
  • Grind the walnuts in a blender.
  • Using a mixer beat the butter with sugar.
  • Add the eggs and mix.
  • Add the flour and mix.
  • Add the walnuts. Mix.
  • Add the raisins and mix with a spatula.
  • Pour the batter in the pan.
  • Bake for about 40 minutes or until а toothpick inserted in the middle comes out clean. Once the cake cooled down, transfer to a plate.
  • Dust it with powdered sugar before serving.

French Chocolate Cake

French chocolate cake with dark chocolate. Very elegant and light, incredibly simple to make. It became our family signature cake. I make it for breakfast, for unexpected guests, and even as a birthday cake.

  • 200 g dark chocolate chips
  • 150 g unsalted butter
  • 6 eggs
  • 200 g sugar
  • 2 Tbsp all purpose flour sifted
  • 1/4 tsp powdered sugar

Instructions
 

  • Preheat oven to 375 degrees F. Generously butter a baking pan, then dust with little flour and tap out the excess.
  • Meanwhile melt the chocolate and butter in the microwave. Mix well.
  • Whisk eggs with sugar until frothy and blended.
  • Add eggs to the chocolate batter and whisk.
  • Add sifted flour and whisk again.
  • Pour into prepared cake pan and bake for 25- 30 minutes.
  • Run the knife along to check if it is ready. Cake should be moist and not dry.
  • Let it completely cool, remove the cake from the pan. Dust with confectioner’s sugar and serve.
