Instructions
  1. Preheat oven to 375°F.
  2. Peel the potatoes and cut them into 4 pieces.
  3. In a large bowl, toss the potatoes with the barbecue sauce, mayonnaise, salt and pepper.
  4. Drizzle 4 tbsp of olive oil into baking pan.
  5. Spread the potatoes evenly on the bottom of prepared baking pan.
  6. Bake at 375°F for 65 minutes, or until potatoes are golden and tender.
  7. Garnish with fresh herbs and serve.
